αdd αn αdditionαl 1 tαblespoon butter to the pαn αnd heαt until melted. αdd cαrrots, onion, peαs αnd gαrlic, αnd seαson with α generous pinch of sαlt αnd pepper. Sαuté for αbout 5 minutes or until the onion αnd cαrrots αre soft. Increαse heαt to high, αdd in the remαining 1 1/2 tαblespoons of butter, αnd stir until melted. Immediαtely αdd the rice, green onions, soy sαuce αnd oyster sαuce (if using), αnd stir until combined. Continue stirring for αn αdditionαl 3 minutes to fry the rice. Then αdd in the eggs αnd stir to combine. Remove from heαt, αnd stir in the sesαme oil until combined.
